Sometimes you just gotta roll with the punches.

So, this week, instead of a video I'm sharing a simple serving suggestion for tuna or chicken salad. This is one of my favorite ways to eat tuna. It's refreshing and the crunch of the cucumber is very satisfying - perfect for summer.

Prepare tuna however you'd like. I made a simple version with diced onion, carrot, & celery, mayo, and season with salt & pepper this time, but tuna salad with grapes & feta from last week's post would be great here as well. Slice cucumbers about 1/4" thick on the bias - not too thin or they won't hold up. Place a spoonful of tuna on each cucumber slice and enjoy!

Other things you can use in place of cucumbers:

Endive or lettuce leaves
Wide cut pieces of sweet bell peppers
Celery
Zucchini slices
